Spicy Asian Salad with Kimchi

This Asian salad is a fabulous recipe. It is very easy to make, is full of interesting flavours. To make this salad you will need:

1 large zucchini, shredded

1 large cucumber

6-8 crimini mushrooms, sliced

A large double handful of mung bean sprouts

3 sheets of nori seaweed, cut into thin slivers

5 or 6 baby bok choy, sliced thinly

The juice from half a lime

1 or 2 cups of kimchi

1 inch chunk of ginger, finely diced

1 red capsicum, finely chopped

1 avocado, cut into small pieces

1 carrot, shredded

How to make the salad

It is very simple, you add all the ingredients into a large bowl and then mix them together well. Let the salad stand for 20 minutes, stirring briefly every 5 minutes. This enables the flavours to mingle together and for the vegetables to soften slightly. Now enjoy your gourmet salad.

Gazpacho Salad

This gazpacho salad is a great meal for summer allowing your body to feel rehydrated. You can add some hot peppers to spice up the taste a little, it is up to you. Mix all the ingredients into a bowl and chill for a short time before eating. These quantities are sufficient for one person or enough for two if enjoying a light meal. You will need:

1 large cucumber, chopped into small pieces

5 or 6 small (cherry) tomatoes cut into small pieces

A handful of cilantro, it should be finely chopped

2 or 3 sweet capsicums, chopped into small pieces

2 stalks of celery, chopped into small pieces

¾ inch piece of fresh ginger, finely diced

½ lemon, juiced and chopped excluding the rind

1 avocado, chopped into small pieces

Celery Salad

This is a very simple yet tasty gourmet salad. Simply prepare and mix the few ingredients together in just a couple of minutes. There are lots of options listed of additions you can add if you wish to the basic salad. The main ingredients are:

Celery

Flat leaf parsley

Zest of 1 lemon

Juice of ½ a lemon

Spinach Salad with Cashews, Avocado and Cranberries

This simple salad takes just 5 minutes to prepare, you will need:

4 cups of spinach

1/3 of a cup of cashew nuts

¼ cup of dried cranberries

½ of an avocado

1 teaspoon of lime juice

These ingredients are sufficient for one person; add accordingly to how many people you are serving. Cut the avocado into bite sized pieces, sprinkle the lime juice onto the avocado then toss all the ingredients together. Serve immediately.

Fresh Corn Salad

This is a great salad that easily prepared for lunch breaks with satisfying taste combinations. To make this gourmet salad you will need the following ingredients:

2 cups of fresh corn kernels

1 cup of rocket (arugula)

½ cup of red capsicum, finely chopped

¼ of an onion, preferably sweet and cut into slices

8 raw sun dried olives, pitted and finely chopped

Juice of ½ a lemon

You simply mix all the ingredients together and serve.

Carrot Raisin Salad

This is another simple but fresh tasting treat and makes a good side dish to a meal. You will need:

4 large carrots, peeled and grated

A handful of raisins

Juice of half a lemon

You could just add all the ingredients together and serve, but for a better tasting treat you should first soak the raisins in water for at least 30 minutes. Grate the carrots using a large grater and then add the strained raisins and lemon juice.

Fiesta Slaw

This tasty variation on coleslaw takes about 20 minutes to prepare, you will need:

1 large cabbage

2 large carrots

2 red capsicums

1 small beetroot

250g raisins

A handful of cilantro

1 chili (optional)

Fresh ginger

1 lemon

Either use your food processor or a hand grater to prepare the cabbage, carrots, beetroot and capsicum. Finely chop the remaining ingredients, zest the lemon and extract the juice. Carefully mix all the ingredients together and allow it to sit for 20 minutes so the lemon juice is absorbed into the other ingredients.
